1/4 cup butter 3 medium onions chopped (1.5 cups) 4 medium carrots, thinly sliced (2 cups) 4 cans (14 oz each) vegetable broth 1.33 cups uncooked rice 2 cups whole kernel corn (frozen) 2 tb chopped fresh basil (or 2 tps dry) 1/2 tsp dry thyme 1/2 tsp pepper 8 new potatoes cut into fourths 2 bell peppers cut into strips 2 medium zuccini, thinly sliced.Melt the butter in a dutch oven (yeah!) and use it to cook onions and carrots.
